Blast that turkey
My DIY friend David—part-time renovator, part-time cook—has accumulated a number of cool tools while renovating two vintage apartments in Paris, among them a large propane blowtorch, which he likes to use indiscriminately and to the astonishment of guests. Imagine their surprise when he pulled it out and proceeded to “broil” a hot dog—and flambé a bowl of fruit. I wouldn’t be at all surprised if he has plans to brown his delicious French turkey this year in his own unique way, and I for one will be right behind him. Every Thanksgiving I make one of those upside-down pies known as a tarte Tatin, and every year it pops out of its pan just a shade underdone. My handier half keeps a propane torch for plumbing emergencies, but no reason to wait for one of those, I say, in order to amortize the investment. He has suggested that I retrofit my torch for dessert purposes with a handy flame tamer. Stand by for details, assuming I don't set the tablecloth on fire before we speak again next.
